Fall Vegetable Tian – NotJustCo.

This Fall Vegetable Tian utilizes some of the best produce that fall has to offer and makes for a great holiday side. Make sure to look for a delicata squash, sweet potato, and butternut squash that have about the same diameter as you want the rounds to be as similar in size as possible!

Set the oven to 400 with a rack in the middle position, and a rack 4-inches from the broiling element. To a 9×13 baking dish, spread ½ a cup of the Not Just Pasta Sauce in an even layer with across the bottom of the pan. Top with two vertical rows of the delicata, butternut, and sweet potato slices. Pour the remaining sauce in-between each row.

Brush the top of the two rows with the oil, season with ½ teaspoon salt and ¼ teaspoon pepper, cover with foil, and place in the oven for 35 minutes.

Remove from oven and peel back foil. Top each row with the grated cheese cheese, cover back up with foil, and return to the oven for another 20 minutes, until vegetables are fork tender.

Remove from oven, remove foil, and set the oven to broil. Carefully place the dish on the prepared top rack, uncovered, and broil for about 2-3 minutes until golden brown and beginning to bubble. Garnish with the chives or sage, and enjoy!
